Proper Storage and Safe Handling of your Lobsters

We recommend that you cook your lobsters promptly after time of delivery. If this is not possible, Do not open your box until you are ready to cook your lobsters. Opening will release the cold environment contained within the box and will reduce the lobsters out-of-water lifespan. Keep the live lobsters refrigerated. The common household fridge will usually meet the temperature requirements (5′ Celsius – 1′ Celsius). Anything above or below this range will significantly affect the lobsters health.
If a fridge is unavailable then any cold area will suffice. If you place your box outside, make Sure It Is NOT Below Freezing Temperature.Do not expose lobsters to fresh water. Fresh water is lethal to lobsters. This includes Ice.Handle the box carefully. Keep the box right side up. Remember, these are living creatures, they are delicate and can be harmed by rough handling.

The need for artificial sea water tanks stems from the commercial desire of restaurants, stores and fish dealers to exhibit live lobsters. Lobsters today remain a luxury food and assurances that the lobsters are alive and fresh before they are purchased is exactly what consumers are looking for

Artificial sea water can preserve lobsters just as well as natural sea water when certain requirements are met to recreate the essential conditions of the natural habitat of the lobster. One of the two main issues of storing live lobsters in tanks for commercial purposes is the necessity of producing the required supply of oxygen and maintaining the right salt concentration.

Lobsters require a constant salt concentration in their water and can only stand a relatively small change in this concentration. Balanced salt levels and a continuous supply of fresh oxygen are essential to the lobsters’ function. Apart from ordinary salt, there is an additional mixture of mineral salts present in sea water that are vital to the survival of lobsters. The five most important components of natural sea water are Sodium Chloride, Magnesium Sulphate, Magnesium Chloride, Calcium Chloride and Potassium Chloride.

Water tanks should be constantly cleaned and supplied with fresh oxygen to avoid suffocating the lobsters. It is important to note that with the rise of water temperature the consumption of oxygen by the lobsters will increase twofold. Increased consumption of oxygen will also occur when the salt concentration of the tank water is at low levels.
